Confederate cavalry uniforms in the West wouldn't be much different from what was worn in the East aside from more use of brimmed hats & possibly white trousers as well as a more diverse appearance in contrast to idealised uniform regulations.

A good reference which includes a color plate of western Confederate uniforms is Philip Katcher's 1985 Osprey Men-at-Arms title "U.S. Cavalry on the Plains". You might also try the recent Osprey Elite title "the American Civil War in Indian Territory".
